- Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners. In a large bowl, whisk together the oil, granulated sugar, brown sugar, eggs, and vanilla until smooth. Stir in the zucchini.
- Sprinkle the flour, baking soda, baking powder, salt, and cinnamon over the wet mixture. Stir just until combined, then fold in the chocolate chips.
- Divide the batter evenly among the liners, filling each about ¾ full. Press a few extra chocolate chips on top if you like.
- Bake for 18 to 22 minutes, until the tops are golden and a toothpick inserted in the center comes out with a few moist crumbs.
- Cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
These muffins keep at room temperature in an airtight container for up to 3 days. For longer storage, freeze individually wrapped muffins for up to 3 months and warm them briefly before serving.
