- Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Beat butter with both sugars until light and fluffy, about 3 minutes, scraping the bowl once.
- Beat in egg and vanilla until smooth, about 30 seconds.
- Add flour, baking soda, and salt. Stir with a spatula until a soft dough forms and no dry streaks remain, about 1 minute.
- Fold in chocolate chips and crushed pretzels until evenly mixed.
- Scoop heaping tablespoon mounds onto sheets, spacing 2 inches apart. Bake for 11 to 13 minutes until edges are golden and centers look soft. Immediately sprinkle with flaky salt, cool on the sheet 5 minutes, then transfer to a rack.
Notes
Chill the scooped dough balls for 30 minutes if you prefer thicker, chewier cookies. Bake times are for one sheet at a time; rotate the pan halfway if your oven has hot spots. Store leftover pretzels in a pantry, not the fridge, so they stay crunchy.
