Method
- Whisk the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a medium bowl, whisk the buttermilk, oil, eggs, and vanilla until smooth.
- Add the wet mixture to the dry ingredients and fold until just combined. Stir in the chocolate chips, saving a few for the tops.
- Line a 12-cup muffin tin with paper liners and fill each cup to the top. Scatter reserved chips over the batter. Bake at 425°F for 5 minutes, then lower to 375°F and bake 13 to 15 minutes until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack and serve.
Notes
For the tallest domes, use room temperature buttermilk and eggs, and don’t open the oven during the first 5 minutes. If you don’t have buttermilk, mix 1 cup milk with 1 tablespoon lemon juice and let it sit 5 minutes.
