Ingredients
  

  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 1 (3.4 oz) box instant vanilla pudding mix
  • 2 large eggs
  • 1 ½ tsp vanilla extract
  • 2 cups semi-sweet chocolate chips

Method
 

  1. Beat the butter and both sugars on medium speed for about 2 minutes until light and fluffy.
  2. Add eggs one at a time, then the dry pudding mix and vanilla, beating until smooth and thickened.
  3. In a separate bowl, whisk flour, baking soda, and salt. Add to the wet mixture in three parts, mixing on low just until combined.
  4. Fold in the chocolate chips by hand until evenly distributed.
  5. Preheat oven to 350°F. Scoop dough by rounded tablespoons onto parchment-lined baking sheets and bake for 10 to 12 minutes until edges are golden and centers look soft.
  6. Cool on the sheet for 3 minutes, then transfer to a wire rack. Serve warm or cooled.

Notes

Chill the dough for 30 minutes if you want thicker cookies. For crispier edges, bake 1 to 2 minutes longer, but watch closely so the bottoms do not burn.
