- Beat the butter and both sugars on medium speed for about 2 minutes until light and fluffy.
- Add eggs one at a time, then the dry pudding mix and vanilla, beating until smooth and thickened.
- In a separate bowl, whisk flour, baking soda, and salt. Add to the wet mixture in three parts, mixing on low just until combined.
- Fold in the chocolate chips by hand until evenly distributed.
- Preheat oven to 350°F. Scoop dough by rounded tablespoons onto parchment-lined baking sheets and bake for 10 to 12 minutes until edges are golden and centers look soft.
- Cool on the sheet for 3 minutes, then transfer to a wire rack. Serve warm or cooled.
Notes
Chill the dough for 30 minutes if you want thicker cookies. For crispier edges, bake 1 to 2 minutes longer, but watch closely so the bottoms do not burn.
