Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg plus 1 egg yolk, at room temperature
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9-inch round cake pan with parchment paper. Beat melted butter, brown sugar, and granulated sugar until smooth and grainy. Add egg, egg yolk, and vanilla; beat until glossy.
  2. Whisk flour, baking soda, and salt in a separate bowl until evenly mixed.
  3. Stir dry ingredients into wet ingredients until a thick dough forms, then fold in chocolate chips.
  4. Press dough evenly into the prepared pan. Bake for 22 to 26 minutes, until golden on top with set edges and a slightly underdone center.
  5. Cool in the pan on a wire rack for 15 minutes, lift out using parchment, slice into wedges, and serve.

Notes

For the chewiest result, pull the cookie cake when the center still jiggles just a bit. It will carry on cooking from the hot pan as it cools, so a tiny bit of underbaking gives you that dense, gooey middle.
