Method
- Melt the butter and chopped chocolate together in a double boiler or microwave, then cool 5 minutes.
- Beat the eggs, egg yolk, both sugars, and vanilla on medium-high until thick and pale, about 3 to 4 minutes.
- Sift the flour, cocoa, baking powder, and salt over the egg mixture, pour in the cooled chocolate, and fold just until combined. Fold in the chocolate chips.
- Scoop 2-tablespoon mounds onto parchment-lined sheets and bake at 350°F (175°C) for 10 to 12 minutes, until edges are set and centers look soft.
- Cool on the baking sheet for 10 minutes, then transfer to a wire rack.
Notes
These cookies are best enjoyed warm, but they stay soft for days stored in an airtight container. For an over-the-top treat, sandwich two around a scoop of vanilla ice cream.
