Chocolate Chip Brownie Cookies Recipe

Ingredients
  

  • 1/2 cup (60 g) all-purpose flour
  • 1/4 cup (25 g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 6 tablespoons (85 g) unsalted butter
  • 4 ounces (113 g) semisweet or bittersweet chocolate, chopped
  • 3/4 cup (150 g) packed light brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 1 cup (170 g) semisweet chocolate chips

Method
 

  1. Melt the butter and chopped chocolate together in a double boiler or microwave, then cool 5 minutes.
  2. Beat the eggs, egg yolk, both sugars, and vanilla on medium-high until thick and pale, about 3 to 4 minutes.
  3. Sift the flour, cocoa, baking powder, and salt over the egg mixture, pour in the cooled chocolate, and fold just until combined. Fold in the chocolate chips.
  4. Scoop 2-tablespoon mounds onto parchment-lined sheets and bake at 350°F (175°C) for 10 to 12 minutes, until edges are set and centers look soft.
  5. Cool on the baking sheet for 10 minutes, then transfer to a wire rack.

Notes

These cookies are best enjoyed warm, but they stay soft for days stored in an airtight container. For an over-the-top treat, sandwich two around a scoop of vanilla ice cream.
