Chocolate Chess Pie Recipe

Ingredients
  

  • 1 unbaked 9-inch pie crust
  • ½ cup (1 stick) unsalted butter, melted
  • 1½ cups granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 2 large eggs, at room temperature
  • 1 can (5 oz) evaporated milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon white vinegar
  • 1 tablespoon fine cornmeal
  • ¼ teaspoon salt

Method
 

  1. Preheat oven to 350°F. Whisk butter, sugar, and cocoa until smooth. Whisk in eggs one at a time, then evaporated milk, vanilla, vinegar, cornmeal, and salt.
  2. Place pie crust on a baking sheet. Pour in filling.
  3. Bake 45 to 50 minutes until edges are set and center jiggles slightly.
  4. Cool completely on a wire rack, at least 2 hours, then slice and serve.

Notes

The pie needs to cool fully to set, so plan for at least 2 hours of cooling time. For the cleanest slices, chill the pie before cutting. By the next day, the filling becomes even denser and more fudgy, so make-ahead is encouraged.
