Chocolate Biscuit Pudding Recipe

Ingredients
  

  • 200 g plain tea biscuits
  • 1 L whole milk
  • 100 g granulated sugar
  • 30 g cornstarch
  • 30 g unsweetened cocoa powder
  • 3 large egg yolks
  • 1 tsp vanilla extract
  • ΒΌ tsp fine sea salt
  • 30 g unsalted butter
  • Softly whipped cream and chocolate curls to serve

Method
 

  1. Whisk sugar, cornstarch, cocoa, and salt in a saucepan. Stir in half the milk until smooth, then add remaining milk and egg yolks. Cook over medium heat, whisking constantly, until thick and bubbly, about 6 to 8 minutes. Off the heat, stir in butter and vanilla. Cool 5 minutes.
  2. Arrange a single layer of biscuits in a greased 20 cm square dish. Spread one-third of the custard over them. Repeat two more times, ending with custard on top.
  3. Cover custard surface with plastic wrap and refrigerate at least 4 hours until firm. Slice into squares, plate, and top with whipped cream and chocolate curls.

Notes

The pudding needs at least 4 hours in the fridge to set properly; overnight is even better. If your biscuits are very thin, the layers may soften more, which is still delicious but will slice a little less neatly.
