Ingredients
Method
- Preheat oven to 350°F (175°C) and line an 8×8-inch metal pan with parchment. Whisk flour, cocoa powder, baking soda, and salt in a large bowl until no lumps remain, about 30 seconds.
- Add the mashed banana, sugar, melted butter, eggs, and vanilla directly to the dry ingredients. Stir with a whisk until the batter is smooth and glossy, about 1 minute.
- Pour the batter into the prepared pan and spread it evenly. Bake for 30 to 35 minutes, until the top springs back and a toothpick inserted in the center comes out with moist crumbs.
- Cool the cake in the pan on a wire rack for 10 minutes, then lift it out and cool completely. Slice into 9 squares and serve.
Notes
For the fudgiest texture, pull the cake when the center is just set and a toothpick still picks up a few moist crumbs. It will continue to set as it cools. Very dark, almost black bananas give the deepest flavor and the softest crumb.
