- Preheat oven to 350°F (180°C) and grease an 8×8-inch baking dish. In a large bowl, mash bananas until smooth, then whisk in milk, egg, maple syrup, melted butter, and vanilla.
- Add oats, cocoa powder, baking powder, and salt. Fold with a spatula until no dry spots remain, about 20 seconds.
- Stir in all but 2 tbsp of the chocolate chips, then spread batter into the dish. Sprinkle remaining chips on top and press lightly.
- Bake 28 to 32 minutes until edges pull away and center is just set with a slight jiggle. Cool 5 minutes, then slice into 6 squares and serve warm.
Notes
For the fudgiest center, pull the oatmeal from the oven while there is still a small jiggle. It will continue to set as it cools. If using a glass dish, the bake time edges toward the longer end of the range, so check at 30 minutes.
