Method
- Preheat oven to 350°F. Grease and line a 9x5-inch loaf pan.
- Beat butter and sugar until pale and fluffy, about 3 minutes.
- Add eggs one at a time, beating well after each, then mix in vanilla.
- Sift in flour, baking powder, and salt. Add half the milk, mix on low, then add remaining milk and mix until just combined.
- Reserve 1 cup of batter in a separate bowl. Stir together cocoa and hot water, then fold into the reserved batter.
- Dollop both batters into the pan, swirl 4 to 5 times with a knife, and bake 50 to 55 minutes until a toothpick has a few moist crumbs.
- Cool in pan 10 minutes, transfer to a rack to cool completely, then dust with powdered sugar and slice.
Notes
Let the cake cool all the way before slicing or the crumb will tear. This loaf tastes even better the next day, so feel free to bake it the night before and wrap it once cool.
