Ingredients

  • 4 oz dried chipped beef, rinsed and roughly chopped
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1/2 tsp freshly ground black pepper
  • Pinch of cayenne pepper (optional)

Method

  1. Melt butter in a large skillet over medium heat. Add the beef and cook for 1-2 minutes until fragrant.
  2. Sprinkle flour over the beef and stir constantly for 1 minute until the flour turns golden and smells nutty.
  3. Slowly whisk in the milk, bring to a gentle bubble, and stir until the mixture starts to thicken.
  4. Lower the heat and simmer, stirring often, for 4-5 minutes until the gravy coats the back of a spoon. Stir in pepper and cayenne, then ladle over hot buttered toast.

Notes

Serve immediately over hot buttered toast for the classic diner experience. The gravy will thicken upon standing; thin with a splash of milk if needed.
