Chipless Chocolate Chip Cookies Recipe

Ingredients
  

  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 2 1/2 cups (313g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • 1/2 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Cream the butter with both sugars until light and fluffy, about 3 minutes.
  2. Beat in the eggs one at a time, then mix in the vanilla.
  3. Whisk together the flour, baking soda, cornstarch, and salt, then add to the butter mixture in two additions, mixing just until combined.
  4. Cover and chill the dough for at least 1 hour.
  5. Scoop tablespoonfuls onto the baking sheets, spacing them 2 inches apart. Bake for 10 to 12 minutes until edges are golden and centers look soft.
  6. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Chilling time is at least 1 hour and is not included in the prep or total times. You can chill the dough up to 24 hours. Store baked cookies in an airtight container with a slice of bread to keep them soft.
