Chinese Noodle Soup Recipe

Ingredients
  

  • 8 oz boneless, skinless chicken thighs, cut into bite-sized pieces
  • 4 cups chicken broth
  • 2 cups water
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tsp toasted sesame oil
  • 2 garlic cloves, minced
  • 1-inch piece fresh ginger, peeled and grated
  • 4 oz dried Chinese wheat noodles
  • 3 baby bok choy, halved lengthwise
  • 2 green onions, sliced
  • Salt, to taste

Method
 

  1. Heat oil in a pot, add garlic and ginger, cook 1 minute.
  2. Add broth, water, soy sauce, and vinegar; bring to a boil, then simmer.
  3. Add chicken and poach for 5 minutes until cooked through.
  4. Stir in noodles and cook according to package directions until tender.
  5. Add bok choy, cook 2 minutes, turn off heat, drizzle with remaining sesame oil, garnish with green onions, and serve.

Notes

This soup is best served right away, as the noodles will keep absorbing liquid. If you plan to have leftovers, cook the noodles separately and add them to each bowl just before ladling the hot broth over them. For a deeper flavor, let the broth simmer an extra 5 minutes before adding the chicken.
