Ingredients

  • 1 ½ lb boneless, skinless chicken thighs
  • 1 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp grated fresh ginger
  • 2 cloves garlic
  • ¾ cup cornstarch
  • ¼ cup all-purpose flour
  • 1 tsp salt
  • 1 tsp ground white pepper
  • ½ tsp five spice powder
  • ½ tsp chili flakes
  • 4 cups neutral oil, for frying
  • 2 scallions

Method

  1. Cut the chicken into 1 ½ inch pieces and marinate with the soy sauce, Shaoxing wine, ginger, and one minced garlic clove for 10 minutes.
  2. Mix the cornstarch, flour, 1 tsp salt, ½ tsp white pepper, and five spice powder in a bowl. Toss the chicken pieces in the dry mix until fully coated, pressing to adhere.
  3. Heat the oil to 350°F (175°C) and fry the chicken in batches for 3 to 4 minutes per batch until pale golden. Drain on a wire rack.
  4. Toss the hot chicken with the remaining ½ tsp white pepper, extra salt, chili flakes, fried garlic slices if using, and most of the scallions. Serve immediately with the reserved scallion greens on top.

Notes

For extra-crunchy chicken, try a quick double fry: after all the pieces have drained for a few minutes, return them to 375°F oil for 30 to 60 seconds until deeply golden. Let the chicken rest on a rack while you finish the seasoning toss.
