Ingredients
  

  • 1 medium green cabbage, shredded thin (about 6 cups)
  • 3 green onions, thinly sliced
  • 1 (3 oz) package instant ramen noodles, any flavor
  • ½ cup slivered almonds
  • 2 tbsp unsalted butter
  • ¼ cup neutral oil
  • 3 tbsp rice vinegar
  • 2 tbsp granulated sugar
  • 1 tbsp soy sauce
  • 1 tsp toasted sesame oil (optional)

Method
 

  1. Crush the ramen in its package, discard the seasoning, and toast the noodles and almonds in butter over medium heat for about 3 to 4 minutes until golden, then set aside to cool.
  2. Whisk together the oil, rice vinegar, sugar, soy sauce, and sesame oil until the sugar dissolves.
  3. Toss the cabbage and green onions with two-thirds of the dressing, then add the cooled ramen mixture and toss gently.
  4. Add remaining dressing if needed, scoop into a serving bowl, and serve immediately.

Notes

This salad is at its best within the first thirty minutes of being dressed, while the ramen is still crisp. If you’re making it for a crowd, bring the components in separate containers and toss on site so the crunch stays snappy.
