- Slice chicken across the grain into thin strips. Shred cabbage into thin pieces, discarding the core.
- Whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, cornstarch, sugar, and water; set aside.
- Heat oil in a large skillet or wok over high heat. Sear chicken in a single layer until golden, about 2 minutes per side, then remove to a plate.
- Add garlic and ginger to the pan, stir 20 seconds, then add cabbage. Toss for 1 to 2 minutes until just wilted but still crisp.
- Pour the sauce into the pan, return chicken, and toss for 30 seconds to 1 minute until glossy. Serve immediately over rice.
Notes
This stir-fry moves fast, so have everything prepped before the pan gets hot. The sauce thickens the moment it hits the high heat, so do not let it sit in the pan long after tossing or it will over-reduce.
