- Cut the napa cabbage crosswise into 1-inch ribbons, separating the thick white pieces from the leafy green tops, and slice the garlic.
- Heat the vegetable oil in a large skillet or wok over high heat. Add the garlic and chili flakes and stir for 20 seconds until fragrant.
- Add the white cabbage pieces first and stir-fry for 1 minute, then add the green parts and cook for 4 to 5 minutes, tossing frequently, until wilted but still slightly crisp.
- Pour in the soy sauce, sugar, and salt, stir for 30 seconds, then remove from heat and drizzle with sesame oil. Serve immediately.
Notes
Napa cabbage releases a lot of water; cooking over high heat is what keeps things from steaming. If you like a bit of char, use a heavy pan and let it sit for 30 seconds between stirs.
