Ingredients

  • 1 cup packed fresh flat-leaf parsley leaves
  • 2 tbsp fresh oregano leaves
  • 4 cloves garlic
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp red pepper flakes
  • 1 tsp kosher salt

Method

  1. Finely chop the parsley, oregano, and garlic together on a cutting board until the garlic is in tiny flecks and the herbs are rice-sized.
  2. Transfer the mixture to a bowl. Add olive oil, red wine vinegar, red pepper flakes, and salt. Whisk for 15 seconds until combined.
  3. Let the sauce sit for 5 minutes, then spoon generously over grilled steak or vegetables. Serve extra on the side.

Notes

For the best flavor, let the sauce sit at room temperature for at least 10 minutes before using. It’s at its brightest the day you make it, but leftovers keep well in the fridge. If the oil solidifies, just stir it back together.
