- Whisk the lime juice, chili powder, garlic, honey, soy sauce, olive oil, and salt in a bowl. Add the chicken and coat well, then let it sit at room temperature for 15 minutes.
- Heat a large skillet over medium-high heat with a thin film of oil. Lift the chicken from the marinade and cook for 5 to 6 minutes per side until deeply golden and cooked through (165°F internal). Transfer to a plate.
- Pour the reserved marinade into the skillet and bring to a boil, then reduce the heat and simmer until thickened, about 4 to 5 minutes. Stir in any juices from the resting chicken.
- Return the chicken to the pan, spoon the glaze over the top, and warm for a minute. Plate with extra glaze, a squeeze of lime, and cilantro.
Notes
The chicken benefits from a brief 15-minute marinade, but you can let it sit in the fridge for up to an hour for deeper flavor. Leftover glaze is delicious drizzled over rice or roasted vegetables.
