Ingredients
  

  • 1 cup neutral oil, such as grapeseed or canola
  • ¾ cup Korean chili flakes (gochugaru)
  • ¼ cup crushed red pepper flakes
  • 3 large shallots, thinly sliced
  • 6 cloves garlic, minced
  • 1-inch knob fresh ginger, minced
  • ¼ cup roasted unsalted peanuts, roughly chopped
  • 2 tbsp white sesame seeds
  • 2 tsp kosher salt
  • 1 tsp granulated sugar
  • 1 tbsp soy sauce
  • 1 tsp toasted sesame oil

Method
 

  1. Warm the oil in a saucepan over medium-low heat, add the shallots, and cook slowly for 8 to 10 minutes until deeply golden.
  2. Stir in the garlic and ginger and cook 1 to 2 minutes more, just until fragrant.
  3. Place the chili flakes in a heatproof bowl, pour the hot oil and aromatics over them, and stir immediately.
  4. Mix in the peanuts, sesame seeds, salt, sugar, soy sauce, and sesame oil. Let cool 10 minutes, then spoon into a jar.

Notes

The chili crisp thickens as it cools. If the oil separates, just stir it back together. Store it in a jar with a tight lid and let it sit overnight for the best flavor.
