Chili Cheese Frito Corn Salad Recipe

Ingredients
  

  • 2 (15 oz) cans whole kernel corn, drained
  • 1 (10 oz) can Rotel diced tomatoes with green chiles, drained well
  • 1 cup shredded sharp cheddar cheese
  • ½ cup diced red bell pepper
  • ⅓ cup sliced green onions
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • Juice of 1 lime
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • 1 (9 oz) bag chili cheese Fritos, roughly crushed

Method
 

  1. In a large bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
  2. Add drained corn, Rotel, cheddar, bell pepper, and green onions. Stir until well coated.
  3. Cover and refrigerate for at least 30 minutes.
  4. Right before serving, fold in most of the crushed Fritos and transfer to a serving bowl. Top with reserved chips and serve immediately.

Notes

The salad benefits from a 30-minute chill for the flavors to meld, but you can make it up to a day ahead (without the chips). Add the Fritos just before serving to keep them crunchy.
