Chili Cheese Dogs Recipe

Ingredients
  

  • 1 lb ground beef (80/20)
  • 1 small yellow onion, finely diced
  • 2 garlic cloves, minced
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (8 oz) can tomato sauce
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp kosher salt
  • ¼ cup water
  • 4 all-beef hot dogs
  • 4 split-top hot dog buns
  • 1 tbsp unsalted butter, softened
  • 1 cup shredded sharp cheddar cheese
  • Yellow mustard and diced white onion, for serving

Method
 

  1. Brown the ground beef in a large skillet over medium-high until deeply browned, about 7 minutes, breaking it up.
  2. Add the onion and garlic, cook 3 minutes, then stir in the tomato paste for 1 minute. Add the tomato sauce, beans, chili powder, smoked paprika, cumin, salt, and water. Simmer 12 to 15 minutes until thick.
  3. While the chili simmers, butter the outer sides of the buns and toast in a dry skillet until golden. In the same pan, sear the hot dogs, rolling occasionally, for 5 to 7 minutes until lightly blistered and hot.
  4. Place each dog in a toasted bun, spoon on the hot chili, and pile on the cheese so it melts. Finish with mustard and diced onion. Serve immediately.

Notes

If the chili thickens too much as it sits, stir in a tablespoon of warm water before spooning it over the dogs. Use any leftover chili on baked potatoes or nachos the next day.
