Ingredients

  • 8 oz cream cheese, softened
  • 15 oz can chili (no beans)
  • 1 cup shredded sharp cheddar
  • 4 oz can diced green chiles, drained

Method

  1. Stir the softened cream cheese, chili, and green chiles in a bowl, then fold in half the cheddar.
  2. Spread the mix in an 8-inch oven-safe skillet. Bake in a cold oven set to 375°F for 15 minutes until bubbling.
  3. Top with the remaining cheese and broil for 2 minutes until melted and browned in spots.
  4. Serve hot with chips, garnished with scallions or cilantro if you like.

Notes

If your cream cheese is still cold, microwave it for 10 seconds to soften it enough to stir. The dip can be assembled and refrigerated a day ahead; bake it straight from the fridge and add 5 extra minutes to the oven time.
