Chili Cheese Burrito Recipe

Ingredients
  

  • 1 tbsp vegetable oil
  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can (10 oz) red enchilada sauce
  • 2 cups shredded sharp cheddar cheese
  • 4 large (10-inch) flour tortillas

Method
 

  1. Brown the beef in oil over medium-high heat, about 5 minutes, then drain any fat. Stir in the taco seasoning and water.
  2. Add the enchilada sauce, simmer for 3 minutes until thickened.
  3. Place the tortillas flat. Sprinkle cheese down the center, spoon the beef mixture over it, fold in the sides, and roll up tightly.
  4. Toast the burritos seam side down in a dry skillet over medium heat for 2 minutes per side, until golden and the cheese melts. Serve hot.

Notes

For the best cheese pull, shred your own cheese. Pre-shredded often has anti-caking agents that keep it from melting smoothly. Warming the tortillas in the microwave for 20 seconds makes them more pliable before filling.
