- Brown the 1/2 lb ground beef and diced onion in a skillet over medium-high heat until the beef is no longer pink, about 5 minutes. Stir in the garlic and cook 1 minute.
- Add the kidney beans, tomato sauce, chili powder, cumin, salt, and cayenne. Bring to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally.
- Season the 1 lb ground beef with salt and pepper, form into 4 patties slightly larger than the buns, and press an indent in the center of each.
- Cook the patties in a hot skillet over medium-high heat for 3 to 4 minutes per side, until they reach 160°F.
- Place patties on buns, spoon chili over top, pile on the cheddar, and serve right away.
Notes
For the best texture, use freshly shredded cheese and an 80/20 ground beef blend. If you like extra heat, add a sliced jalapeño to the chili while it simmers.
