Chili Beans Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup beef broth
  • Salt and black pepper

Method
 

  1. Brown the ground beef in a large pot over medium-high heat for about 8 minutes, then transfer to a bowl, leaving a tablespoon of fat in the pot.
  2. Cook the onion in the fat over medium heat for 4 to 5 minutes until soft. Stir in tomato paste and garlic for 1 minute, then add chili powder, cumin, and smoked paprika and cook 30 seconds.
  3. Pour in broth and scrape up browned bits. Add tomatoes, beans, and beef. Bring to a boil, then reduce to a simmer and cook uncovered for 15 minutes, stirring occasionally.
  4. Taste and adjust salt and pepper. Ladle into bowls and top with cheese, sour cream, or green onions. Serve hot.

Notes

This chili thickens as it sits, so if you plan to make it ahead, you might stir in a little extra broth when reheating. Any combination of beans works, and using fire-roasted tomatoes instead of plain adds a nice charred note.
