Method
- Heat oven to 350°F (180°C). Line a baking sheet with parchment. Blend the chickpeas, almond butter, maple syrup, and vanilla in a food processor until completely smooth, about 2 minutes, scraping sides once.
- Scrape the batter into a bowl. Stir in the baking powder and salt, then fold in the chocolate chips.
- Drop 1½-tablespoon scoops of dough onto the sheet, spacing them 2 inches apart. Bake 10 to 12 minutes until edges are set and golden.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool further. Serve warm or at room temperature.
Notes
If your almond butter is unsalted, bump the salt up to a generous ¼ tsp. The dough will be sticky, so using a cookie scoop makes portioning much easier.
