- Combine ground chicken, ginger, garlic, white parts of scallions, 1 tbsp soy sauce, 1/2 tsp sesame oil, and white pepper. Mix gently until just combined.
- Place a scant tablespoon of filling onto each wrapper. Seal with water into triangles, then bring corners together and pinch. Set on a parchment-lined tray.
- Bring chicken broth to a gentle boil. Stir in remaining 1 tbsp soy sauce, rice vinegar, and remaining 1/2 tsp sesame oil. Taste and add salt if needed.
- Cook wontons in simmering broth in two batches until they float, about 4 minutes, then 1 minute more. Add bok choy for the last minute. Ladle into bowls and top with scallion greens.
Notes
Uncooked wontons freeze beautifully. Lay them in a single layer on a tray, freeze until hard, then bag them. Cook straight from frozen, adding about 2 minutes. This recipe makes more wrappers than you need for one batch; seal up the rest and keep them chilled for another meal.
