Chicken Wing Boil Recipe

Ingredients
  

  • 2 lbs chicken wing pieces (drumettes and flats)
  • 1 small yellow onion, quartered
  • 3 garlic cloves, smashed
  • 1 tsp fine sea salt
  • 1 bay leaf
  • 4 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • Freshly ground black pepper
  • 1 tbsp chopped fresh parsley

Method
 

  1. In a large pot, bring 6 cups water, quartered onion, smashed garlic, bay leaf, and salt to a boil over high heat.
  2. Add the wings, reduce heat to a gentle simmer, and cook 12 to 15 minutes until a thermometer reads 165°F (74°C). Skim any foam.
  3. Meanwhile, melt butter in a small pan over medium heat. Stir in minced garlic and cook 1 minute. Off heat, whisk in paprika, cayenne, and black pepper.
  4. Drain wings well, return to the pot, pour the hot butter sauce over them, and toss to coat. Transfer to a plate and top with parsley. Serve immediately.

Notes

If your wings are whole, not sectioned, add 3 more minutes to the simmer time and check the temperature in the meatiest part of the drumette. The butter will pool at the bottom of the serving plate, so pass extra bread for dipping.
