- Heat olive oil in a large skillet over medium-high. Season chicken with ½ tsp salt and pepper, then cook until golden and cooked through, about 5 to 6 minutes. Transfer to a plate.
- Reduce heat to medium, add butter, and sauté garlic for 30 seconds until fragrant.
- Pour in chicken broth and cream, bring to a simmer, then add tortellini and remaining salt. Cook 8 to 10 minutes, stirring occasionally, until pasta is tender and sauce thickens.
- Off heat, stir in Parmesan and nutmeg, then fold in chicken. Garnish with parsley and serve hot.
Notes
The sauce will continue to thicken as it sits. If reheating, add a splash of milk or broth to loosen it up. Always use freshly grated Parmesan for the smoothest melt.
