Chicken Thigh Marinade Recipe

Ingredients
  

  • 1/4 cup olive oil
  • 3 tbsp fresh lemon juice
  • 4 garlic cloves, minced
  • 2 tbsp Dijon mustard
  • 1 tbsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 1/2 lbs boneless, skinless chicken thighs

Method
 

  1. Whisk olive oil, lemon juice, garlic, Dijon, oregano, salt, and pepper in a bowl until smooth.
  2. Add chicken thighs to a resealable bag or dish, pour in the marinade, and coat well. Refrigerate at least 30 minutes and up to 12 hours.
  3. Remove chicken, pat dry, and sear in a hot skillet over medium-high heat for 6-8 minutes per side until golden and 165°F internally.
  4. Rest the thighs 5 minutes, then slice against the grain and serve with pan drippings.

Notes

The hands-on prep time does not include marinating (30+ minutes). For the best crust, don’t skip drying the chicken after it leaves the marinade. If using bone-in thighs, add a few extra minutes to the cook time and always check with a thermometer.
