Chicken Stuffing Casserole Recipe

Ingredients
  

  • 3 cups cooked chicken, shredded or cubed
  • 1 (10.5 oz) can cream of chicken soup
  • ½ cup sour cream
  • ½ cup milk
  • 1 cup frozen mixed vegetables
  • ½ medium onion, finely chopped
  • 1 rib celery, finely chopped
  • 1 (6 oz) box chicken-flavored stuffing mix
  • ½ cup unsalted butter, melted
  • ½ tsp garlic powder
  • Salt and black pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Whisk soup, sour cream, milk, garlic powder, salt, and pepper. Mix in chicken, vegetables, onion, and celery.
  2. Toss stuffing mix with melted butter and seasoning packet until moistened. Add a small splash of water if needed.
  3. Spread chicken mixture in a 9x13-inch dish. Scatter buttered stuffing on top in an uneven layer, do not press down.
  4. Bake 30 to 35 minutes, until stuffing is golden and sauce bubbles at the edges. Rest 5 minutes before scooping and serving.

Notes

If using unsalted butter, add a pinch of salt to the stuffing mix. The casserole will look quite saucy when it comes out of the oven but sets up nicely after the short rest. For extra color, broil the top for 1 to 2 minutes right before serving, watching closely.
