Ingredients
  

  • 1.5 lb boneless skinless chicken thighs, cut into 1-inch pieces
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp dried Mexican oregano (or regular oregano)
  • 1/2 tsp black pepper
  • 3/4 tsp fine salt, divided
  • 2 tbsp neutral oil
  • 2 medium Roma tomatoes, halved
  • 1 jalapeño, halved lengthwise
  • 2 cloves garlic, unpeeled
  • 1/4 cup roughly chopped white onion
  • 1/4 cup fresh cilantro leaves
  • 2 tbsp fresh lime juice
  • 1/2 cup sour cream
  • 12 small corn tortillas (4 to 5 inches)
  • 1/2 cup finely diced white onion
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Method
 

  1. Char tomatoes, jalapeño, garlic, and rough onion in a dry skillet over medium-high heat until blistered, 4-5 minutes per side. Peel garlic, remove jalapeño stem and seeds if desired. Blend with cilantro, 2 tbsp lime juice, and 1/2 tsp salt until chunky.
  2. Toss chicken with chili powder, cumin, garlic powder, oregano, pepper, and remaining 1/4 tsp salt. Sear in oil over medium-high heat until browned and cooked through, 6-8 minutes total.
  3. Whisk sour cream, 1 tbsp lime juice, and a pinch of salt for the crema. Thin with a little water if you like.
  4. Warm tortillas in a dry pan or microwave. Fill with chicken, crema, salsa, diced onion, and cilantro. Serve with lime wedges.

Notes

If you are short on time, grill the chicken on a hot grill pan or outdoor grill instead. The salsa tastes even smokier made a day ahead.
