Chicken Sausage Skillet Recipe

Ingredients
  

  • 12 oz fully cooked chicken sausage, sliced into 1/2-inch rounds
  • 2 tbsp olive oil, divided
  • 2 bell peppers, sliced into strips
  • 1 medium red onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups fresh baby spinach (optional)
  • 1 tbsp balsamic vinegar

Method
 

  1. Heat 1 tbsp oil in a large skillet over medium-high heat. Add sausage slices in a single layer and cook 4 to 5 minutes, turning once, until browned. Transfer to a plate.
  2. Reduce heat to medium, add remaining 1 tbsp oil, peppers, and onion. Cook 5 to 7 minutes until softened, then stir in garlic, oregano, salt, and pepper. Cook 1 minute more.
  3. Return sausage to the skillet, add spinach if using, and toss 1 to 2 minutes until spinach wilts. Drizzle with balsamic vinegar and toss again.
  4. Spoon over cooked rice or grains and serve warm.

Notes

Have your rice or other grain ready before you start, since the skillet comes together fast. Any leftover sausage and vegetables keep well in the fridge for up to 3 days and reheat nicely for a quick lunch.
