Ingredients
  

  • 2 cups cooked chicken breast, finely chopped or shredded
  • 2 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sweet pickle relish
  • 1 rib celery, finely diced
  • 1 tbsp finely minced sweet onion
  • 1 tsp fresh lemon juice
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper

Method
 

  1. Stir the mayonnaise, sweet pickle relish, lemon juice, salt, and pepper together in a large bowl until smooth.
  2. Add the chicken, celery, and onion. Gently fold until the chicken is evenly coated.
  3. Fold in the chopped hard-boiled eggs with a few gentle turns, keeping the egg pieces distinct.
  4. Cover and refrigerate for at least 30 minutes. Spoon into a serving bowl, dust with paprika, and serve chilled.

Notes

The 30-minute chill time is important for the flavors to marry, but the salad can be eaten right away if you are short on time. For the cleanest texture, cool the chicken completely before mixing.
