Chicken Potato Casserole Recipe

Ingredients
  

  • 2 lbs boneless skinless chicken thighs (6 to 8 pieces)
  • 2 lbs Yukon gold potatoes (about 6 medium), sliced 1/4 inch thick
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese, divided
  • 1 tsp smoked paprika, divided
  • 1 tsp dried thyme
  • 2 tbsp olive oil, divided
  • Salt and black pepper

Method
 

  1. Preheat oven to 400°F. Pat chicken dry and season with salt, pepper, and 1/2 tsp paprika. Brown in 1 tbsp olive oil over medium-high heat, 4 minutes per side. Remove to a plate.
  2. Add remaining 1 tbsp olive oil to the skillet. Cook onion over medium heat for 3 to 4 minutes until soft, then stir in garlic for 30 seconds.
  3. Off the heat, layer half the potatoes in the skillet, season with salt and pepper, then nestle in the chicken. Top with remaining potatoes. Pour cream and broth over everything, then add half the Parmesan, remaining paprika, and all the thyme.
  4. Cover and bake 30 minutes. Uncover, sprinkle with remaining Parmesan, and bake 15 to 20 minutes until golden and potatoes are tender.
  5. Let rest 5 minutes, then serve warm.

Notes

Let the casserole rest for a few minutes after baking. The sauce will thicken and cling to the potatoes better when it is not piping hot.
