Chicken Parmesan Sandwich Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1½ lbs total)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ½ cup finely grated Parmesan cheese
  • ½ tsp garlic powder
  • Olive oil, for frying (about ½ cup)
  • 1 cup warm marinara sauce
  • 4 oz fresh mozzarella, sliced, or 1 cup shredded low-moisture mozzarella
  • 4 hoagie or sub rolls
  • 1 tbsp butter, softened
  • Fresh basil leaves (optional)

Method
 

  1. Pound the chicken breasts to ½ inch thick between plastic wrap and season with salt and pepper. Set up flour, beaten eggs, and a mix of panko, Parmesan, and garlic powder for breading. Dredge each cutlet in flour, then egg, then press into the panko mixture.
  2. Heat ½ cup olive oil in a skillet over medium-high heat. Fry cutlets in batches for 3 to 4 minutes per side, until golden and the internal temperature hits 165°F. Transfer to a rack or paper towels.
  3. Arrange fried cutlets on a foil-lined sheet pan, top each with 2 tablespoons marinara and mozzarella, then broil 2 to 3 minutes until bubbly and golden.
  4. Butter the cut sides of each roll and broil, cut side up, for 1 minute until lightly toasted.
  5. Place each cutlet on a toasted roll, add a little more marinara and fresh basil, close, and serve immediately.

Notes

If the cutlets finish frying before you’re ready to broil, keep them warm in a 200°F oven on a wire rack so the crust stays crisp. For the cleanest slices, let the assembled sandwich sit for just a minute before cutting so the cheese sets slightly and doesn’t slide off.
