- Halve chicken breasts horizontally to make 4 thin cutlets. Pound each between plastic wrap to ½-inch thickness. Season both sides with salt and pepper.
- Place flour in one shallow bowl, beaten eggs in a second. Mix panko, Parmesan, Italian seasoning, and garlic powder in a third.
- Dredge each cutlet in flour, dip in egg, then press firmly into the panko mixture. Set aside.
- Pour oil into a large skillet to a depth of ¼ inch. Heat over medium-high until shimmering. Fry cutlets in batches, 3 to 4 minutes per side, until deep golden. Drain on paper towels.
- Wipe skillet, spread marinara sauce in bottom. Nestle fried cutlets in sauce, top with mozzarella slices.
- Bake at 425°F (220°C) for 10 to 12 minutes until cheese is melted and bubbly. Serve immediately with fresh basil.
Notes
Use a meat thermometer to confirm the chicken reaches 165°F. If you'd like a browner cheese topping, broil for the last 60 seconds. Rest the cutlets for 2 to 3 minutes before serving so the cheese sets slightly.
