Chicken Parmesan Recipe

Ingredients
  

  • 2 boneless, skinless chicken breasts (about 1 ½ lbs total)
  • Salt and black pepper
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • ½ cup finely grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • Vegetable or olive oil, for frying
  • 1 cup marinara sauce
  • 8 oz fresh mozzarella, sliced
  • Fresh basil, for garnish

Method
 

  1. Halve chicken breasts horizontally to make 4 thin cutlets. Pound each between plastic wrap to ½-inch thickness. Season both sides with salt and pepper.
  2. Place flour in one shallow bowl, beaten eggs in a second. Mix panko, Parmesan, Italian seasoning, and garlic powder in a third.
  3. Dredge each cutlet in flour, dip in egg, then press firmly into the panko mixture. Set aside.
  4. Pour oil into a large skillet to a depth of ¼ inch. Heat over medium-high until shimmering. Fry cutlets in batches, 3 to 4 minutes per side, until deep golden. Drain on paper towels.
  5. Wipe skillet, spread marinara sauce in bottom. Nestle fried cutlets in sauce, top with mozzarella slices.
  6. Bake at 425°F (220°C) for 10 to 12 minutes until cheese is melted and bubbly. Serve immediately with fresh basil.

Notes

Use a meat thermometer to confirm the chicken reaches 165°F. If you'd like a browner cheese topping, broil for the last 60 seconds. Rest the cutlets for 2 to 3 minutes before serving so the cheese sets slightly.
