- Toss the chicken with the chili powder, cumin, smoked paprika, garlic powder, and salt until coated.
- Heat 2 tbsp oil in a hot skillet over medium-high heat. Sear the chicken in a single layer for 3 minutes, flip, and cook 2-3 minutes more until done. Remove to a plate.
- Add the remaining 1 tbsp oil, then the peppers and onion. Cook undisturbed for 2 minutes, stir, and cook 5-6 minutes until charred and tender. Return the chicken, toss, and squeeze in the lime juice.
- Warm the tortillas, fill with the mixture, add toppings, and serve with lime wedges.
Notes
Let the chicken come to room temperature for about 10 minutes before cooking so it sears evenly. If your skillet is not large enough to hold the chicken in a single layer, cook it in two batches; crowding the pan will steam the meat instead of browning it.
