Chicken Fajita Casserole Recipe

Ingredients
  

  • 1 1/2 lbs boneless skinless chicken breasts, cut into bite-size pieces
  • 3 bell peppers (any color), sliced into strips
  • 1 large onion, sliced
  • 2 cups long-grain white rice, uncooked
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 cups chicken broth
  • 2 tbsp fajita seasoning
  • 1/2 tsp salt
  • 2 cups shredded Mexican blend cheese

Method
 

  1. Preheat oven to 375°F (190°C). Toss chicken with 1 tbsp fajita seasoning and sear in an oven-safe skillet with oil over medium-high for 4-5 minutes until browned. Remove chicken.
  2. Add sliced peppers, onion, and a bit more oil to skillet; cook 6 minutes until softened and charred at edges. Stir in remaining fajita seasoning, tomatoes, broth, salt, and rice. Bring to a simmer, scraping up browned bits.
  3. Nestle chicken back into skillet. Cover and bake 25-30 minutes until rice is tender and liquid is mostly absorbed.
  4. Uncover, top evenly with cheese, and bake uncovered 8-10 minutes until cheese is melted and bubbly. Serve hot.

Notes

Let the casserole rest for 5 minutes after baking so the cheese sets up and the rice finishes steaming. For homemade fajita seasoning, mix 1 tsp each chili powder, cumin, paprika, garlic powder, onion powder, and 1/2 tsp oregano.
