Ingredients
Method
- Preheat oven to 375°F (190°C). Toss chicken with 1 tbsp fajita seasoning and sear in an oven-safe skillet with oil over medium-high for 4-5 minutes until browned. Remove chicken.
- Add sliced peppers, onion, and a bit more oil to skillet; cook 6 minutes until softened and charred at edges. Stir in remaining fajita seasoning, tomatoes, broth, salt, and rice. Bring to a simmer, scraping up browned bits.
- Nestle chicken back into skillet. Cover and bake 25-30 minutes until rice is tender and liquid is mostly absorbed.
- Uncover, top evenly with cheese, and bake uncovered 8-10 minutes until cheese is melted and bubbly. Serve hot.
Notes
Let the casserole rest for 5 minutes after baking so the cheese sets up and the rice finishes steaming. For homemade fajita seasoning, mix 1 tsp each chili powder, cumin, paprika, garlic powder, onion powder, and 1/2 tsp oregano.
