Chicken Fajita Burrito Recipe

Ingredients
  

  • 1 lb boneless, skinless chicken thighs, cut into thin strips
  • 2 bell peppers (any color), sliced into strips
  • 1 medium yellow onion, sliced into half moons
  • 2 cloves garlic, minced
  • 2 tbsp olive oil, divided
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp salt, plus more to taste
  • Juice of 1 lime (about 2 tbsp)
  • 4 large flour tortillas (burrito size)
  • ½ cup shredded Monterey Jack cheese
  • ¼ cup sour cream
  • ½ cup pico de gallo or salsa
  • 1 avocado, sliced
  • Small handful cilantro leaves

Method
 

  1. Heat 1 tbsp oil in a large skillet over medium-high heat. Add chicken, season with salt and spices, and sear 5-6 minutes, turning once, until golden and cooked through. Transfer to a plate.
  2. Add remaining oil to the skillet. Cook peppers and onion 4-5 minutes until softened and charred in spots, then stir in garlic 1 minute more.
  3. Return chicken and any juices to the skillet, add lime juice, and toss over medium heat for 1 minute to warm through. Taste for salt.
  4. Warm tortillas, then fill each with the chicken mixture, cheese, sour cream, avocado, pico de gallo, and cilantro. Fold sides in, roll tightly, slice, and serve.

Notes

Warm the tortillas just before assembling. The filling can sit over low heat for a few minutes without drying out.
