- Heat the oil in a large pot over medium-high heat. Add the onion and cook 4 minutes until softened. Stir in the garlic and cook 30 seconds.
- Pour in the broth, enchilada sauce, cumin, chili powder, and salt. Nestle the chicken into the liquid, bring to a simmer, then cover and cook on medium-low for 15 to 20 minutes until the chicken reaches 165°F.
- Remove the chicken, let it cool briefly, then shred with two forks. Return the shredded chicken to the pot.
- Stir in the drained beans, corn, and cream cheese cubes. Cook over medium heat for about 4 minutes, stirring until the cream cheese melts and the soup is creamy.
- Ladle into bowls and top with shredded cheese, cilantro, and a squeeze of lime. Add tortilla strips for crunch if you like.
Notes
If the soup thickens after sitting, thin it with a splash of broth when you reheat. For a brothy version, leave out the cream cheese and just top with shredded cheese.
