Chicken Egg Rolls Recipe

Ingredients
  

  • 8 egg roll wrappers
  • 1 lb ground chicken
  • 2 cups shredded green cabbage
  • ½ cup shredded carrot
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • ½ tsp white pepper
  • 1 egg, beaten
  • Nonstick spray or vegetable oil

Method
 

  1. Preheat oven to 400°F (200°C) and set a wire rack in a rimmed baking sheet. Cook the ground chicken in a skillet over medium-high heat until no longer pink, about 5 minutes.
  2. Add cabbage, carrot, garlic, and ginger. Cook for 3 to 4 minutes until softened. Off heat, stir in soy sauce, sesame oil, and white pepper. Cool slightly.
  3. Place a wrapper with a corner toward you. Spoon 3 tablespoons of filling across the lower third, fold the bottom corner over, fold in the sides, and roll tightly. Seal the top corner with beaten egg. Repeat.
  4. Place rolls seam side down on the rack, mist with oil, and bake 12 minutes. Turn and bake 8 to 10 minutes more until golden and crisp.
  5. Cool 2 minutes, slice each roll on the bias, and serve with dipping sauce.

Notes

Let the filling cool for a few minutes before rolling; warm filling is fine, but hot filling can soften the wrapper and make tearing more likely. If you are baking in a convection oven, drop the temperature to 375°F (190°C) and start checking for doneness a couple of minutes early.
