- Melt butter in a large pot over medium heat. Whisk in flour and cook 2 minutes.
- Slowly whisk in chicken broth. Simmer 5 minutes until slightly thickened.
- Reduce heat to medium-low. Stir in chicken, ham, Dijon, and garlic powder. Season with salt and pepper. Warm through for 5 minutes.
- Turn heat to low. Gradually stir in Swiss cheese until melted, then add heavy cream. Heat gently for 3-4 minutes; do not boil.
- Ladle into bowls and top with croutons and parsley. Serve immediately.
Notes
Rotisserie chicken works perfectly here and saves time. If your ham is extra salty, hold back on adding salt until after the soup has simmered. The croutons add a nice crunch, but you can also serve the soup with thick slices of toasted bread on the side.
