Chicken Cordon Bleu Sandwich Recipe

Ingredients
  

  • 2 boneless, skinless chicken breasts (6 oz each), pounded to ½ inch and halved if wide
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt and black pepper
  • 4 slices deli ham or prosciutto
  • 4 slices Swiss cheese
  • 2 tbsp Dijon mustard
  • 3 tbsp mayonnaise
  • 2 sandwich rolls (ciabatta or brioche)
  • Vegetable oil for frying

Method
 

  1. Pound chicken to ½‑inch thickness, season with salt, pepper, garlic powder, and paprika. Set up flour, beaten eggs, and panko. Dredge each cutlet in flour, then egg, then panko, pressing to coat.
  2. Heat ⅓ cup oil over medium-high until shimmering. Cook cutlets 3 to 4 minutes per side until golden and 165°F inside. Drain on paper towels.
  3. Wipe skillet, return to medium-low. Place cutlets in pan, top each with 2 ham slices and 2 cheese slices. Cover for 1 to 2 minutes until cheese melts.
  4. Split rolls and toast cut-side down in the skillet or under a broiler for about 90 seconds until lightly golden.
  5. Mix Dijon and mayo, spread on both halves of each roll. Add a cutlet, close the sandwich, and serve immediately.

Notes

Serve the sandwiches right away for the crispiest texture. If you need to work ahead, fry the chicken early and reheat in a 350°F oven for about 10 minutes before adding the ham and cheese.
