Ingredients

  • 3 cups cooked, diced chicken
  • 1 ½ cups diced ham
  • 2 cups shredded Swiss cheese, divided
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 tbsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup panko breadcrumbs
  • 2 tbsp melted butter

Method

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch dish. In a saucepan, melt 3 tbsp butter, whisk in flour, cook 1 minute. Slowly whisk in milk, Dijon, garlic powder, salt, and pepper. Simmer until thickened, about 3 to 4 minutes.
  2. Layer the chicken, then ham, then 1 ½ cups Swiss cheese in the dish. Pour sauce evenly over the top.
  3. Stir panko with 2 tbsp melted butter and the remaining ½ cup Swiss cheese. Scatter over the casserole.
  4. Bake 25 to 30 minutes until bubbly and golden. Broil briefly for more color if needed.
  5. Rest 5 minutes, then scoop and serve with a sprinkle of parsley if you like.

Notes

Let the casserole rest before serving so the sauce sets a bit. If you use rotisserie chicken, the whole recipe comes together in less than 15 minutes of hands-on work.
