Ingredients
  

  • 3 cups cooked chicken, shredded or diced
  • 1 (12-oz) bag frozen mixed vegetables
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup chicken broth
  • 1/2 cup whole milk
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • Salt and black pepper, to taste
  • 2 cups all-purpose biscuit mix
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted

Method
 

  1. Preheat the oven to 400°F and grease a 9x13-inch baking dish. In a large bowl, combine the chicken, vegetables, soup, broth, milk, garlic powder, thyme, salt, and pepper; pour into the dish.
  2. In a medium bowl, whisk the biscuit mix, sour cream, milk, and melted butter until a thick, sticky dough forms.
  3. Drop the dough by large spoonfuls over the chicken mixture, leaving space between them.
  4. Bake for 30-35 minutes, until the biscuits are golden brown and the filling bubbles.
  5. Let rest 5 minutes, then scoop and serve hot.

Notes

If the filling looks too thin after baking, let it rest a bit longer. The biscuit topping will soften as it sits; reheat leftovers in the oven to crisp them up again.
