Chicken Chow Mein Noodles Recipe

Ingredients
  

  • 8 oz dried chow mein noodles, parboiled and drained
  • 1 lb boneless, skinless chicken thighs, cut into thin strips
  • 2 tbsp vegetable oil, divided
  • 3 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp toasted sesame oil
  • 1 tsp sugar
  • 2 scallions, sliced

Method
 

  1. Whisk soy sauce, oyster sauce, sesame oil, and sugar until the sugar dissolves. Set aside.
  2. Heat 1 tablespoon oil in a wok over high heat. Sear chicken strips in a single layer until browned on one side, then toss and cook until halfway done, about 3–4 minutes. Remove to a plate.
  3. Add remaining 1 tablespoon oil, garlic, and ginger; stir for 15 seconds. Add cabbage, carrot, and bell pepper; stir-fry 2–3 minutes until just softened.
  4. Return chicken and any juices to the wok. Add noodles and sauce; toss with tongs for 1–2 minutes until hot and glossy. Top with scallions and serve immediately.

Notes

If using fresh noodles, rinse them under hot water and drain well before adding to the wok. Keep the heat high and toss constantly for that slightly charred flavor.
