Chicken Caprese Sandwich Recipe

Ingredients
  

  • 2 boneless skinless chicken breasts (about 8 oz each)
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 4 oz fresh mozzarella, sliced into 1/4-inch rounds
  • 2 sandwich rolls, split
  • 1 large ripe tomato, sliced
  • 8 large fresh basil leaves
  • 2 tbsp balsamic vinegar or balsamic glaze

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper. Cook until golden and cooked through, about 4 minutes per side (165°F internal).
  2. Top each breast with mozzarella. Add 1 tbsp water to the pan, cover, and cook until the cheese melts, 1 to 2 minutes.
  3. While the cheese melts, toast the split rolls in a dry skillet or toaster until golden and crisp.
  4. Place chicken on the bottom halves, layer with tomato and basil, drizzle with balsamic, close the sandwich, and serve immediately.

Notes

If you have time, lightly toast the rolls in the same skillet after removing the chicken—the drippings add extra flavor. For a sweeter drizzle, reduce regular balsamic vinegar in a small saucepan for 5 minutes until syrupy.
